Kracken-Marinated Grilled Veggie Basket or Skewers
Perfect for a summertime (or anytime) get-together!
Servings: 2 people
- 1 eggplant cubed
- 2 small zucchini
- 1 red bell pepper
- ½ red onion
- 1 cup Kracken Marinade
- Prepare vegetables: slice zucchini into think coins, cut pepper into 1-inch wide strips, and chop onion into 1-inch cubes.
- Place all ingredients into a zip-style plastic bag or shallow bowl. Shake or stir to coat vegetables with marinade. Place in the refrigerator to marinate at least 30 minutes or up to 2 hours.
- While veggies are marinating, place 24 wooden skewers into water to soak (if using skewers) or spray grill basked with vegetable oil and set aside. Set grill to medium-hot heat.
- Drain marinade and set aside. Thread veggies onto skewers or toss into basket. Cook until cooked through and slightly charred, brushing with more marinade if necessary.
